Trước khi nấu súp thì nên ngâm vi cá trước một tiếng để vi cá mềm dễ tước. Vi cá khi mềm thì các bạn tước sợi nhỏ ra như mực khô nướng.
Đùi gà rửa sạch, luộc chín, lấy nước dùng gà nấu súp. Đùi gà chín để nguội, lọc bỏ xương rồi cắt thịt nhỏ.
Trong thời gian chờ gà chín thì sơ chế các nguyên liệu còn lại: Cà rốt gọt bỏ vỏ rồi cắt nhỏ li ti. Nấm hương ngâm nở rồi cắt nhỏ. Tôm tươi rửa sạch bóc vỏ rồi cắt nhỏ. Ngò rí nhặt bỏ cuống, rửa sạch.
Cho những nguyên liệu ở trên vào nồi nước dùng gà đun nhỏ lửa, cho thêm một thìa bột canh đun trong 15 phút. Hoà tan bột năng với 50 ml nước, đổ từ từ vào nồi nước súp. Đập trứng ra chén rồi đánh bông, đổ từ từ vào nồi súp để tạo vân. Cuối cùng đổ vi cá vào và đun trong 3 phút, vi cá mềm là được.
Múc súp ra chén, rắc hạt tiêu và ngò rí lên ăn nóng.
