Món xôi gà dễ chế biến, đơn giản, dùng làm món ăn sáng cho cả nhà vừa nhanh vừa ngon. Bạn có thể chuẩn bị tất cả nguyên liệu vào tối hôm trước, sáng dậy chỉ việc đồ xôi là xong.
Gạo nếp đãi qua nhiều lần nước cho thật sạch, ngâm gạo vào âu nước lạnh có hòa một ít muối qua đêm. Pa tê mua về cho ra chén.
Thịt ức gà rửa sạch, cho vào nồi, thêm nước ngập mặt, đun sôi khoảng 3 - 4 phút thì tắt bếp, để nguội.
Hành tím bóc bỏ lớp vỏ khô bên ngoài, cắt lát mỏng, đun nóng dầu, cho hành vào phi vàng. Để lại một ít hành để phi thơm xào thịt gà.
Dùng tay sạch xé thịt gà theo chiều dọc thành những sợi nhỏ vừa ăn, cho vào chén thịt gà khoảng nửa muỗng cà phê muối, 1/2 muỗng cà phê tiêu, một muỗng cà phê đường, trộn đều, ướp khoảng 30 phút.
Đun nóng ba muỗng cà phê dầu ăn, phi hành còn lại thơm, cho thịt gà vào đảo ở lửa nhỏ khoảng 5 phút, nêm vào 1/2 muỗng cà phê xì dầu, đảo nhẹ tay, nêm nếm lại gia vị cho vừa ăn, đun đến khi thịt gà gần khô lại thì tắt bếp.
Nếp sau khi ngâm, cho vào chõ hấp, đồ chín, khi đồ thỉnh thoảng mở nắp nồi ra để xới cho xôi chín đều.
Khi dùng múc một ít xôi vào chén, bên trên dùng muỗng phết một lớp patê, rồi đến một ít thịt gà và cuối cùng thêm hành phi lên bề mặt.
