Khoai tây gọt vỏ, rửa sạch, cắt thành các miếng vừa. Cánh gà rửa sạch, ướp với 45ml nước tương, 15ml rượu, 5ml dầu mè, 2.5g muối, 2.5g đường, tiêu trong 1 giờ.
Chuẩn bị một chảo vừa, thêm 30ml dầu ăn, rồi cho 1/2 chỗ gừng tỏi đập dập vào phi thơm. Cho cánh gà vào chiên cho đến khi vàng (mỗi bên chiên 3 phút).
Cho thịt gà ra đĩa. Thêm 15ml dầu vào chảo, thêm ít gừng, tỏi băm còn lại vào cùng khoai tây, chiên đến khi khoai tây có màu vàng nâu. Sau đó đổ cánh gà vào chảo, rồi thêm cả gia vị đã ướp gà còn lại trong bát vào, đậy vung, đun liu riu 30 phút. Nếu thiếu nước có thể thêm một chút để không bí cháy đáy nồi.
